What Are Arrosticini?

Arrosticini (pronounced ah-ros-tee-CHEE-nee) are thin skewers—traditionally made with cubed lamb or mutton, though pork versions are common today—threaded onto wooden sticks and grilled over open flame.

They're seasoned simply, grilled quickly, and eaten straight off the skewer—no fork or knife required. Just rustic, juicy bites of perfectly charred meat, often served with slices of crusty bread and a bold glass of red wine.

Pasture-Raised Lamb or Pork
Traditional Arrosticini are made with lamb or mutton, but pork versions are beloved too. The key is tender, flavorful meat with a bit of fat.

Sea Salt

Arrosticini Abruzzesi Recipe

Grilled Lamb & Pork Skewers from Abruzzo

Ingredients (Makes ~20 skewers)

  • 2 lbs lamb shoulder or pork belly (or a mix), cut into ½-inch cubes

  • Wooden skewers (pre-soaked if using over high flame)

  • Sea salt, to taste

  • Olive oil (optional)

Instructions

  1. Prep the Skewers
    Cut the meat into small, even cubes (about ½ inch). Thread tightly onto skewers, alternating lean and fatty pieces if possible.

  2. Preheat the Grill
    Use a traditional fornacella grill if you have one, or heat a charcoal or gas grill to medium-high.

  3. Grill Quickly & Evenly
    Place skewers over the flame and cook for 6–8 minutes, turning every 1–2 minutes, until the meat is browned and crisp on the edges.

  4. Season & Serve
    Sprinkle with coarse salt just before serving. Optional: brush with olive oil or serve with lemon wedges or chili flakes.

Tips for Perfect Arrosticini

  • Don’t overseason – The meat’s natural flavor should shine. Avoid marinades or garlic-heavy rubs.

  • Use a proper grill if possible – The traditional fornacella creates direct heat under each skewer, but any grill or cast iron pan will work.
